Ingredients

  • 1 cup - Freshly grated Coconut
  • 3 tbsp - Sugar
  • 1/2 tsp - Vanilla essence
  • 1/2 cup - Milk
  • 2 cups - Flour/maida
  • 2 - Eggs, beaten
  • 1/2 tsp - Salt
  • 1 tbsp - Ghee

How to Make Coconut Pancakes

  • Mix the coconut, vanilla essence and sugar together.
  • Cook on a low flame till sugar melts and keep aside
  • Make a batter with the flour, beaten egg, milk and salt.
  • Add a little water if the batter is too thick.
  • Grease a frying pan and spread a spoonful of batter on the pan to form a pancake.
  • Cook on both sides.
  • Put a spoonful of coconut filling in the centre and fold the side over.
  • Serve with jam or honey.
