Ingredients

  • 1.5 cups - unbleached flour
  • 2 tsp - baking powder
  • 1/2 cup - shredded Coconut
  • 2 tbsp - maple syrup
  • 2 tbsp - Honey
  • 3/4 to 1 cup - reduced fat Milk
  • 6 - Egg whites
  • 1/2 cup - fat-free-egg-substitute
  • 4 tbsp - Canola Oil

How to Make Coconut Waffles

  • Preheat your waffle iron.
  • Mix the flour, baking powder and coconut in a large bowl.
  • Whisk together the syrup, honey and egg substitute in a small bowl.
  • Stir in the oil and milk.
  • In a medium bowl, beat the egg whites until stiff.
  • Make a well in the centre of the dry ingredients.
  • Pour in the liquid mixture and mix well.
  • Then gently fold the egg whites into the batter.
  • Bake in the waffle iron until golden brown.
