Ingredients

  • 3 - Brinjal
  • 3 - Onion
  • 3 - Tomato
  • 6 tsp - Tamarind juice thick
  • A pinch Turmeric
  • Salt to taste
  • 2 tsp - oil
  • For garnish : 1/2 tsp - mustard
  • 1/2 tsp - Methi seeds
  • A little oil
  • To grind:
  • 6 - small Onion
  • 2 tsp - Coconut
  • 4 - Cloves Garlic
  • 6 - Red Chilli
  • 1 tsp - Coriander seeds
  • 1/2 tsp - Cumin seeds
  • 2 tsp - dal or Channa dal
  • 1 small bunch - Coriander
  • How to Make Coimbatore tamarind kozhambu:

    1. Fry all the ingredients to be ground and make a smooth paste.
    2. Heat oil, add mustard and methi seeds. Add brinjal, tomato and onion and fry a little
    3. Add tamarind paste, salt, and turmeric
    4. Add 2 cups of water and allow to boil for 10 mins.
    5. Add the paste and cook on sim for 5 - 7 mins
    6. Garnish with coriander leaves.
