Ingredients

  • 175 g short cut macaroni
  • 50 g butter
  • 7 tbsp flour, pinch dry mustard
  • salt and pepper
  • 600 ml. milk
  • 175 g cheddar cheese grated
  • Crisp crumbs
  • To prepare crisp crumbs:
  • 4 slices fresh bread
  • 50 g butter

How to Make Continental Macaroni Cheese

  • Boil the macaroni and allow to stand.
  • Make a white sauce with the butter, flour, seasonings and milk.
  • Stir in about 100 g cheddar cheese.
  • Thoroughly drain the fully cooked macaroni and return to the casserole.
  • Stir in the cheese sauce.
  • Sprinkle over the remaining cheese and crisp crumbs.
  • Reheat on medium high until bubbling, about 3 - 6 minutes.
  • To prepare crisp crumbs:
  • Remove the crusts from the bread and make into crumbs.
  • Melt the butter in a shallow plate, 1-2 minutes.
  • Thoroughly sift in the crumbs.
  • Cook until crisp, about 2-4 minutes, stirring frequently so that the crumbs will be an even golden brown.
  • Continue to cook until the desired colour.
  • Allow to complete cool, then store in an airtight container.
