  • 1 tin creamed Corn
  • 1 tin whole Corn
  • 3 beaten eggs
  • 1 cup Milk
  • 1/2 tsp - baking powder, salt, pepper
  • Mustard - to taste,
  • 1 cup - fresh bread crumbs
  • 1/2 cup - minced Onion
  • 1/2 cup chopped Capsicum
  • 1 tsp Sugar
  • 1/2 cup Butter
  • 1/2 cup grated cheese
  • For garnishing:
  • a few Pineapple bits, Tomato slices and shredded lettuce.

How to Make Corn Timbales

  • Fry onions in melted butter till light brown. Add capsicums and fry till soft.
  • Add in corn and cook for 5 minutes. Remove from fire.
  • Mix the eggs, seasonings, bread crumbs, baking powder and warm milk together.
  • Add these to the corn mixture and stir in the cheese.
  • Pour into greased moulds or muffin pans and bake in a moderately hot oven for 30 minutes.
  • Top each timbale with a pineapple bit or tomato slice and serve on a bed of shredded lettuce.
