Ingredients

  • 1 tin creamed Corn
  • 1 tin whole Corn
  • 3 beaten eggs
  • 1 cup Milk
  • 1/2 tsp - baking powder, salt, pepper
  • Mustard - to taste,
  • 1 cup - fresh bread crumbs
  • 1/2 cup - minced Onion
  • 1/2 cup chopped Capsicum
  • 1 tsp Sugar
  • 1/2 cup Butter
  • 1/2 cup grated cheese
  • For garnishing:
  • a few Pineapple bits, Tomato slices and shredded lettuce.
  • How to Make Corn Timbales:

    1. Fry onions in melted butter till light brown. Add capsicums and fry till soft.
    2. Add in corn and cook for 5 minutes. Remove from fire.
    3. Mix the eggs, seasonings, bread crumbs, baking powder and warm milk together.
    4. Add these to the corn mixture and stir in the cheese.
    5. Pour into greased moulds or muffin pans and bake in a moderately hot oven for 30 minutes.
    6. Top each timbale with a pineapple bit or tomato slice and serve on a bed of shredded lettuce.
