Ingredients

  • Cracked wheat (Tuta Genhun, Gothum rava) - 1 cup
  • Water or as needed - 2 cups
  • Sesame oil (also called til oil or nalla ennai) - 3 tbsp
  • Mustard Seeds - 1/2 tsp
  • Channa dal - 2 tsp
  • Whole red chilies - 4
  • Roasted and unsalted Peanuts - 1/4 cup
  • Dry Methi leaves (kasoori Methi) - 1 tsp
  • Curry leaves or Cilantro leaves - a few
  • Turmeric powder - 1/2 tsp
  • Asafoetida - 1 pinch
  • Water - 1/4 cup
  • Salt - 1 tsp
  • Tamarind concentrate - 2 tbsp
  • Grated Carrots - 1/2 cup
  • How to Make Cracked Wheat Puliogare:

    1. Heat a pan with water add the cracked wheat and cook until it has become soft and cooked.
    2. Takes about 15 minutes. After it is cooked keep it aside to cool for about 10 minutes.
    3. To Season:
    4. Heat a pan with 3 tbsp of oil.
    5. Add mustard seeds, channa dal and whole red chilies and wait for the mustard seed to pop.
    6. When the mustard seeds pop add the turmeric powder, asafoetida, dry methi leaves and curry leaves saute for a few seconds.
    7. Add water and salt and let the water come to a boil.
    8. When the water starts boiling add the cooked cracked wheat mix thoroughly and serve.
    9. As a option you can add grated carrots at the end.
