Ingredients

  • 1 cup - Wheat flour
  • 3/4 cup - Corn meal
  • 1/3 cup - low calorie Sugar
  • 2 tsp - baking powder
  • 3/4 cup - fat-free buttermilk
  • 1/4 cup - fat-free sour Cream
  • 1 cup - cranberries, chopped
  • 1 - Egg white, whipped
  • 1/2 tsp - Lemon peel, grated

How to Make Cranberry Cornmeal Muffins

  • Preheat an oven to 350 degrees C.
  • Prepare muffin pans with cooking spray and flour. Set aside.
  • In a mixing bowl, combine flour, corn meal, 1/3 cup of sugar and baking powder.
  • In another mixing bowl, combine the egg white, buttermilk, sour cream, lemon peel and cranberries.
  • Add the flour mixture and mix well.
  • Use an ice-cream scoop to fill muffin tins three-fourths full.
  • Bake for 20 minutes or until golden.
