Ingredients

  • 1 head - Broccoli, cut into florets/1 pack of frozen and cut Broccoli
  • 1 cup - Milk
  • 1.5 cups - water
  • 1-1.5 tsp - Corn flour (used for thickening the soup)
  • a pinch of Nutmeg
  • salt to taste
  • 1/2 tsp - fresh ground pepper for garnishing
  • croutons for garnishing

How to Make Cream Broccoli Soup

  • Boil the broccoli until half done. Drain.
  • Take a cup of water in a vessel and add milk.
  • Add the boiled broccoli.
  • Heat on medium flame, stirring frequently. Add salt.
  • Dilute the corn flour with 1/2 cup of water.
  • When the broccoli is done, add the corn flour water to the soup and heat on low flame until the soup thickens.
  • Add nutmeg powder and heat for a minute.
  • Serve hot in soup bowls garnished with pepper and croutons.
