Ingredients

  • 1 liter vegetable stock
  • 800g - red Tomato
  • 100g - Carrots
  • 80g - red Onions
  • 10g - Garlic
  • 2 ml - Olive oil
  • 10g - Basil
  • 300g - whole spelt bread, diced into medium sized croutons
  • 200g - broccolini
  • 5 ml - Honey
  • 100g - yellow cherry Tomatoes
  • How to Make Cream of Tomato Soup:

    1. Cook red tomatoes, garlic, onions, carrots, and oil in the vegetable stock.
    2. Blend and strain.
    3. Season with salt and a little honey.
    4. Cut the yellow cherry tomatoes into cubes and add to the soup.
    5. Garnish with short braised broccolini and basil croutons.
