  • 1 liter vegetable stock
  • 800g - red tomato
  • 100g - carrots
  • 80g - red onions
  • 10g - garlic
  • 2 ml - olive oil
  • 10g - basil
  • 300g - whole spelt bread, diced into medium sized croutons
  • 200g - broccolini
  • 5 ml - honey
  • 100g - yellow cherry tomatoes

How to Make Cream of Tomato Soup

  • Cook red tomatoes, garlic, onions, carrots, and oil in the vegetable stock.
  • Blend and strain.
  • Season with salt and a little honey.
  • Cut the yellow cherry tomatoes into cubes and add to the soup.
  • Garnish with short braised broccolini and basil croutons.
