Ingredients

  • Raw Rice - 1.5 cups
  • Tender Cucumber - 350 - 400 g
  • Grated Coconut - 1/2 cup
  • Green chillies - 2 tsp, minced
  • Ginger - 1 tsp, minced
  • Jaggery - 1 tbsp, powdered
  • Turmeric powder - 1/2 tsp
  • Sour curds - 1/2 cup
  • Salt to taste
  • How to Make Cucumber Kadubu:

    1. Wash and soak rice in water for 1-2 hours
    2. Drain and spread on a cloth until dry
    3. Dry grind in a mixer until fine
    4. Now peel and grate the cucumber
    5. Squeeze out the water in a bowl
    6. Grind the coconut with this water to a coarse paste
    7. Mix the ground rice with the coconut paste
    8. Add the remaining ingredients
    9. The consistency of the batter should be slightly thicker than an idly batter
    10. Now grease a deep plate and pour the batter
    11. Steam for 15 minutes. Cool a little, cut into pieces and serve.
