Ingredients

  • Leeks (white part only) - 3, sliced
  • Green peas - 2 cups, shelled
  • vegetable or Chicken stock - 1.5 liter
  • single Cream (half and half) - 1 cup
  • silken Tofu - 100 gm, cubed
  • Celery - 2 stalks, chopped
  • Parsley - 2 tbsp, chopped
  • Butter - 3 tbsp
  • mild curry powder - 2 tsp
  • salt to taste

How to Make Curried Leek and Peas Soup with Tofu

  • Melt butter in a heavy based pan.
  • Add leeks, celery and parsley.
  • Cook stirring till leeks are soft.
  • Stir in the curry powder.
  • Add peas and stock.
  • Simmer till the peas are soft.
  • Cool the mixture and blend till smooth.
  • Transfer to the pan again and heat thoroughly.
  • Stir in the cream and tofu.
  • Simmer gently for 2 minutes.
  • Serve hot.
