  • 1 cup - pink beans, cooked until tender with about 1 tsp of salt
  • 1 medium red onion, sliced very thinly
  • 4-5 Cloves of garlic, thinly sliced
  • 1/2 red habanera pepper, chopped finely (wash hands thoroughly after handling)
  • 1 medium tomato, chopped
  • 1 tbsp - coriander powder
  • 1 tsp - cumin powder
  • 1 tsp - Sugar
  • 1/2 tsp - Turmeric (optional)
  • 1/2 cup - dill, finely chopped
  • 1 tbsp - Canola Oil
  • salt to taste
  • How to Make Curried Pink Beans with Dill:

    1. Heat the oil in a saucepan over medium-high heat. Add the onions and sugar and stir for a minute.
    2. Turn the heat to medium-low and let the onions caramelize for about 10 minutes.
    3. Add the chopped habanera pepper and garlic. Cook for about five minutes.
    4. By now, the onions should be fairly brown and the garlic would have taken a golden hue.
    5. Add the tomato, and turmeric if you are using it, and cumin and coriander powders. Cook, stirring occasionally, until the oil begins to separate.
    6. Add the beans and stir to mix. Add salt to taste.
    7. Allow the beans to simmer for about 10 minutes until the flavours have merged.
    8. Add the chopped dill and turn off the heat.
    9. Serve hot.
