Ingredients

  • 1 cup - dried pitted dates, chopped
  • 1 cup - Brown sugar
  • 60 g - unsalted Butter
  • 1 tsp - bicarbonate of soda
  • 2 cups - self rising flour/all-purpose flour
  • 1 tsp - Nutmeg and Cinnamon spice, ground
  • 2 tbsp - icing Sugar
  • Water as needed

How to Make Date Cake

  • Preheat oven to 170 degree.
  • Grease a baking tin or pan.
  • In a pan gently heat dates, sugar, butter, bicarbonate of soda and 1 cup cold water.
  • Cook till the butter is melted and bring to the boil.
  • Allow it to cool in room temperature.
  • Sift flour and mixed spice into a bowl.
  • Add date mixture, fold in the mixture and bake for 1 hour.
  • Cool on wire rack and dust with icing sugar.
