Ingredients

  • 4 - eggs
  • 2 cups - flour
  • 1.5 cup - broken Walnuts
  • 1.5 cup - broken Almonds
  • 1.5 cup - broken hazelnuts
  • 1.5 cup - candied cherries, halved
  • 1.5 cup - candied Pumpkin
  • 2 cups - Dates
  • 1 cup - Sugar
  • 1/2 cup - rum
  • 2 tbsp - vanilla essence
  • 2 tbsp - baking powder
  • 1/2 tbsp - salt
  • How to Make Date-n-Nut Fruit Cake:

    1. Soak the fruits and nuts in rum overnight.
    2. Beat the eggs, gradually adding sugar and vanilla. Mix thoroughly.
    3. Add flour, baking powder, salt, nuts and fruits one spoon at a time and mix well.
    4. Line 2 cake tins with wax paper.
    5. Divide mixture between the tins.
    6. You might want to save some of the nuts to sprinkle on the top. To do this, first bake the cake for 5-7 minutes and then sprinkle the nuts on top. This prevents them from sinking into the cake.
    7. Bake for 1 hour at 325 degrees F or until knife inserted in the cake comes out dry.
