  • 1 l - milk
  • 2 cups - peeled and grated doodhi
  • 3/4 cup - sugar
  • 1/2 tsp - cardamom powder
  • 15-20 strands of saffron, crushed in 1 tsp of hot milk
  • 10 - pistachios, unsalted and thinly slivered
  • 1 tsp - ghee

How to Make Doodhi Kheer

  • Heat ghee in heavy deep pan
  • Fry the grated doodhi for 5 minutes.
  • Add milk and stir gently to bring to boil.
  • Reduce the flame and cook until the milk thickens
  • Add sugar and stir until it dissolves.
  • Add cardamom, saffron and pistachios. Mix well. Serve hot.
