Ingredients

  • 1 lb - bacon slices
  • 2 lbs - Pork sausages
  • Bacon fat or oil
  • 1 liter - Beef stock
  • 1 liter - cider
  • 4 - large onions, sliced
  • 4 Cloves - Garlic
  • 8 - large potatoes, thickly sliced
  • 4 - carrots, thickly sliced
  • 1 - large bunch of fresh herbs, tied with string
  • 2 tbsp - black pepper
  • Fresh parsley, chopped
  • How to Make Dublin Coddle:

    1. Lightly fry the bacon until crisp. Place in a large cooking pot.
    2. Brown the sausages in some bacon grease or vegetable oil.
    3. Remove and add to pot.
    4. Soften sliced onions and whole garlic cloves in fat.
    5. Then add to the pot with potatoes and carrots.
    6. Bury the bunch of herbs in the middle of the mixture.
    7. Sprinkle with pepper. Cover with cider and stock.
    8. Cook for 1.5 hours over moderate heat, do not boil.
    9. Garnish with chopped parsley.
