Ingredients

  • 1 lb - bacon slices
  • 2 lbs - Pork sausages
  • Bacon fat or oil
  • 1 liter - Beef stock
  • 1 liter - cider
  • 4 - large onions, sliced
  • 4 Cloves - Garlic
  • 8 - large potatoes, thickly sliced
  • 4 - carrots, thickly sliced
  • 1 - large bunch of fresh herbs, tied with string
  • 2 tbsp - black pepper
  • Fresh parsley, chopped

How to Make Dublin Coddle

  • Lightly fry the bacon until crisp. Place in a large cooking pot.
  • Brown the sausages in some bacon grease or vegetable oil.
  • Remove and add to pot.
  • Soften sliced onions and whole garlic cloves in fat.
  • Then add to the pot with potatoes and carrots.
  • Bury the bunch of herbs in the middle of the mixture.
  • Sprinkle with pepper. Cover with cider and stock.
  • Cook for 1.5 hours over moderate heat, do not boil.
  • Garnish with chopped parsley.
