Ingredients

  • 200 gms. Oats flour
  • 1 level tsp. salt
  • 6 level tsp. baking powder
  • 125 gms. ready to eat bran
  • 450 ml. Milk
  • 4 tbsp. soft Butter
  • 4 level tbsp. castor Sugar
  • 2 eggs, beaten

How to Make Easy Bran Muffins

  • Grease 20 tins of - 6.5 cm (2 ½ inches) diameter deep muffin tins. Sift the flour, salt and baking powder together. Soak the bran in milk for 5 minutes.
  • Meanwhile, beat the butter and sugar until light; add the egg and stir until smooth.
  • Add the bran mixture and stir. Add the flour and stir until only just mixed, no longer.
  • Fill the muffin tins two-thirds full and bake in the centre of the oven at 200 degrees C for 25 minutes, or until well browned.
  • Turn out on a wire rack. To serve, split rather than cut open, and butter.
