Ingredients

  • 1 cups - Prawns
  • 1 to 2 tsp - cumin + black pepper powder
  • 1 to 2 tbsp - Ginger + Garlic + Green chilli paste
  • 3 to 4 - Brinjals (each cut into 4 long pieces)
  • 1 - onion, cut finely
  • Few Curry leaves
  • 2 - green chillies, slit (optional)
  • 2 - tomatoes, cut finely
  • 1 tsp - Red Chilli powder
  • 1 tbsp - coriander powder
  • 1/2 tsp - Turmeric powder
  • 1 big cup - Coconut Milk
  • 1 - small Lemon size Tamarind soaked in 1/2 small cup of water
  • 4 to 5 tbsp - Oil for frying
  • Salt to taste
  • How to Make Easy Prawns Curry:

    1. Wash the prawns well and keep aside in a vessel.
    2. Heat the oil and fry the brinjal on high fire till it is slightly brown. Keep aside.
    3. In the same oil, fry the onions till they turn pink. Then add curry leaves and slit green chillies.
    4. Add ginger-garlic-green chilli paste, and fry for some time.
    5. Add the finely cut tomatoes and fry for 3 minutes.
    6. Now add the grind cumin + pepper powder, red chilli powder, coriander powder, and turmeric powder. Fry well till the masala is cooked.
    7. Now add the prawns and fry for 5 minutes.
    8. Add the coconut milk and cook till it boils.
    9. Add the tamarind pulp and salt to taste.
    10. Cook on a slow gas with the vessel covered. Cook till the prawns are cooked.
    11. Add the fried brinjal to the curry and cook for 3 to 4 minutes.
    12. To make this dish more spicy, you can add more red chilli powder.
    13. Serve with rice.
