How to Make

  • Peel the skin off a fresh ridge gourd.
  • Wash the peeled out skin, dry it and fry in oil for 5 minutes; keep aside.
  • In the same pan, fry green chillies and chopped onion separately followed by curry leaves.
  • Put all the above fried items in a blender.
  • Add garlic, tamarind, salt, jaggery, coconut/groundnut.
  • Blend all the above ingredients in a blender coarsely.
  • Finally, heat 1 tsp oil in a pan, add cumin seeds, red chillies, curry leaves.
  • Once it splutters, add the ground chutney to the pan.
  • Fry for 3 minutes.
  • Now ridge gourd skin chutney is ready to serve with hot rice or chapathis/rotis.
