  • 1 - big Ridge gourd skin
  • 5-6 - Green chillies
  • 5 Cloves - Garlic
  • 1 - Onion
  • Curry leaves
  • Cumin seeds
  • Salt for taste
  • Jaggery (optional)
  • Tamarind
  • 1 tbsp - dry coconut/ground nut
  • 2-3 tbsp - oil
  • How to Make Easy Ridge Gourd Chutney:

    1. Peel the skin off a fresh ridge gourd.
    2. Wash the peeled out skin, dry it and fry in oil for 5 minutes; keep aside.
    3. In the same pan, fry green chillies and chopped onion separately followed by curry leaves.
    4. Put all the above fried items in a blender.
    5. Add garlic, tamarind, salt, jaggery, coconut/groundnut.
    6. Blend all the above ingredients in a blender coarsely.
    7. Finally, heat 1 tsp oil in a pan, add cumin seeds, red chillies, curry leaves.
    8. Once it splutters, add the ground chutney to the pan.
    9. Fry for 3 minutes.
    10. Now ridge gourd skin chutney is ready to serve with hot rice or chapathis/rotis.
