How to Make Easy Rogan Josh

  • Cut the lamb into 2 inch pieces. Remove the excess fat and wash thoroughly. Pat dry the mutton pieces.
  • Grind the fennel seeds and black cardamoms separately to a fine powder.
  • Heat mustard oil in a heavy bottomed vessel till it smokes to eliminate the smell.
  • Fry the meat on a low flame till golden in colour.
  • Add the beaten curd and stir continuously to avoid curdling.
  • Fry the mixture till oil separates.
  • Add red chilli powder, salt, asafoetida powder, cloves and ground fennel and ginger powder.
  • Mix well and cook on a low flame till the meat is tender.
  • Add cinnamon powder and black cardamoms powder. Mix well.
  • Garnish with finely chopped coriander leaves and serve.
