How to Make Easy Stuffed Brinjal

  • Make slits in the brinjal and keep aside.
  • Make the dry powder of roasted groundnuts and roasted til, keep aside.
  • Heat oil and then add onions, ginger garlic paste, green chillies, coconut and coriander.
  • Cook for a while, make chutney and keep aside.
  • Take dry powder and the chutney, add salt and mix properly. Stuff in brinjals.
  • Heat more oil in a cooking pan and then add mustard and jeera.
  • Take the stuffed brinjal and cook it by closing the lid tightly without putting water.
  • Then in the remaining masala put little water and boil.
  • Add the brinjal and cook well.
  • Serve hot with chapattis.
