Tomato Curry is a common veg curry in Indian households, slightly spiced with the right desi flavour. Ripe, juicy tomatoes are used to impart an additional tanginess to the curry.
Tomatoes are cooked well with green chillies, curry leaves, ginger, turmeric and chilli powder. See to it that the tomatoes are soft enough and then, add coconut milk to achieve the desired consistency.
Garnish with cumin seeds and coriander leaves and serve hot with roti or rice.
