Ingredients

  • 4 - eggs (hard boiled)
  • 1/2 cup - grated Coconut
  • 1 - Onion (chopped)
  • 2 tbsp - Curd
  • Salt to taste
  • 1 tsp - Red Chilli powder
  • 1 tsp - coriander powder
  • 1/2 tsp - cumin powder
  • 1/4 tsp - Turmeric powder
  • 1 cup - water
  • 1 - Potato (boiled and sliced lengthwise)
  • 1 tbsp - Coconut oil
  • Curry leaves, a few
  • How to Make Egg aviyal:

    1. Cut the boiled eggs in half and keep aside.
    2. Blend all the other ingredients except potato, coconut oil and curry leaves in a blender. Heat a pan and boil the ground ingredients
    3. Add the sliced potatoes and when it comes to a boil, add the halved eggs.
    4. Finally, mix in oil and curry leaves and garnish with coriander leaves.
    5. Serve with rice.
