Ingredients

  • 1 - Egg yolk
  • 1/4 tsp - salt
  • 1/8 tsp - black pepper
  • 1/2 tsp - mustard
  • 1/2 tsp - Sugar
  • 1 cup - salad oil
  • 1 tbsp - Lemon juice

How to Make Egg Mayonnaise

  • Break the yolk in a bowl
  • Add salt, pepper, mustard and sugar. Mix it well
  • Add salad oil drop by drop, whisking the egg mixture till it thickens
  • Gradually add vinegar and mix thoroughly. Instead of lemon juice can add taragon vinegar or cider vinegar
  • Can add 1 tbsp ketchup , 2 tbsp chopped olives and 2 tbsp chopped celery
