Ingredients

  • Egg 4, lightly beaten
  • button Mushrooms - 1/2 cup, chopped
  • soya granules - 1/2 cup
  • Onion - 1/2 cup, minced
  • green chili - 1 tsp, minced
  • Garam Masala - 1/2 tsp
  • Tomato puree - 2 tbsp
  • oil - 1 tbsp
  • Mint and Coriander leaves - 1 tbsp each, chopped
  • salt to taste
  • How to Make Egg, Mushroom and Soya Scramble:

    1. Soak Soya granules in hot water for 15 minutes.
    2. Drain and squeeze out the water.
    3. Heat oil in a fry pan; fry onions till pale brown.
    4. Add green chili and mushroom.
    5. Cook till the liquid from mushrooms is evaporated.
    6. Add garam masala, salt and tomato puree.
    7. Add eggs and stir till eggs are lightly set.
    8. Add mint and coriander leaves.
    9. Mix and remove from fire.
    10. Serve hot on toast.
