Ingredients

  • Eggplant - 4
  • Ginger - 1 inch piece
  • Toor Dal - 1/2 cup
  • Coriander powder - 1 tbsp
  • Onions - 2
  • Red Chillies - 3
  • Cumin - 1 tsp
  • Mustard - 1 tsp
  • Green pepper - 2
  • Oil - 1 tbsp
  • Salt
  • How to Make Egg Plant Dal:

    1. Boil the eggplant and dal separately in the pressure cooker.
    2. Heat kadai, pour oil and splutter mustard, cumin, red chillies and then saute the sliced onions till transparent.
    3. Then add the green pepper and boiled brinjal and fry for a while.
    4. Now add coriander powder and finally dal and salt.
    5. Simmer on flame till done.
