Ingredients

  • 4 - eggs
  • 1 cup - Rice (long grain or raw Rice)
  • 1 - big Onion (finely diced)
  • 4 Cloves - Garlic (finely chopped)
  • 1 - Green chilli (finely chopped )
  • 6 tbsp - oil
  • 1 tsp - Butter (optional)
  • 1/2 tsp - ginger, (finely chopped)
  • 1/4 tsp - Sugar
  • 3 - Tomatoes (finely diced, optional)
  • Leek, finely chopped optional)
  • Seasoning: Salt to taste
  • 1 tsp - Red Chilli powder
  • 1 tsp - pepper powder
  • 1 tsp - fennel powder
  • 1 tsp - cumin powder
  • 1 tsp - curry powder
  • Garnish: Coriander leaves, finely chopped
  • Accompaniments: Fried Potatoes

  • How to Make Egg Rice Recipe:

    1. Pre-preparations:
    2. Cook rice till fluffy using a tsp of oil and a pinch of salt
    3. In a heavy bottom wok heat oil and butter
    4. Add the onion, ginger, garlic and saute
    5. Add sugar and caramelize till golden brown
    6. Add tomato and cook till pulpy
    7. Add the seasoning ingredients and mix well
    8. Reduce the heat completely and add all the eggs. Slowly mix it with the prepared masala
    9. Scramble the eggs
    10. When the scramble becomes moist, add rice gradually in small quantities and mix with the scrambled eggs.
    11. Serve hot and garnish with chopped coriander
