Ingredients

  • 1/2 cup - Grated Carrots
  • 1 cup - quick cooking oats
  • 1 cup - Wheat pastry flour
  • 1/2 cup - All-purpose flour
  • 3 tbsp - Apple sauce
  • 1 cup - Sugar (grounded)
  • 1/4 cup - Butter (room temperature)
  • 1 tsp - Baking soda
  • 1/2 tsp - Baking powder
  • 1 tsp - Ginger powder
  • 2 tbsp - Almond nuts (ground coarsely)
  • A pinch of salt

How to Make Eggless Gingery Carrot Cookies

  • Beat together the butter and grounded sugar (or confectioner's sugar) until soft and creamy. Mix together in a large bowl the quick cooking oats, wheat flour, all-purpose flour, baking soda, baking powder, grounded almond nuts and grated carrots.
  • Add the creamed sugared butter, ginger powder and apple sauce slowly to the flour mixture and make everything into a soft dough.
  • Preheat the oven to 350 degree F. Line a baking sheet over a baking pan and grease the sheet.
  • Take a small portion from the dough and roll small golf-sized balls of it.
  • Place these rolled dough over the greased baking sheet leaving some space between them and bake for 15-20 minutes in middle rack or until they turn golden brown.
