  • 1 cup - Whole Wheat flour
  • 1/2 cup - Sugar
  • 1/4 tsp - Salt
  • 1/4 cup - Mashed Sweet Potato
  • 2 tbsp - Raisins
  • 1/2 tsp - Baking powder
  • 1/2 tsp - Cardamom powder (coarsely powdered)
  • 1/2 cup - Butter (room temperature)
  • Milk (as needed)
  • How to Make Eggless Sweet Potato and Raisin Cookies:

    1. Pre heat the oven to 350 degrees F.
    2. Mix flour, sugar, salt, baking powder, raisins and cardamom powder well with your fingers in a bowl.
    3. Add butter and mashed sweet potatoes to the flour mixture, mix well, finally sprinkle sufficient milk to make a soft dough.
    4. Divide the dough into 15-20 equal parts.
    5. Make them into balls and flatten each ball.
    6. Place the flattened balls on a baking sheet leaving some space between each cookie.
    7. Bake the cookies for about 15-20 minutes or until cookies turn lightly golden brown.
    8. Let the cookies cool down for two to three minutes before taking them off the cookie sheet.
    9. Serve with coffee or tea.
