Ingredients

  • 3 onions, chopped
  • 3 eggplants, Chopped
  • 2 tomatoes, chopped
  • 2 Garlic cloves, chopped fine
  • 1 inch ginger, chopped fine
  • 1 tbsp - oil
  • 1 tsp - Cumin seeds
  • Salt to taste
  • A pinch Turmeric powder
  • 1/2 tsp - chilli powder
  • 1/4 tsp - coriander powder
  • 1/4 tsp - cumin powder
  • Salt to taste
  • 1/2 tsp - Garam Masala
  • Cilantro (optional)

How to Make Eggplant onion curry

  • Heat oil in a wok, add the cumin seeds. When it splutters, add the tomatoes and ginger.
  • Stir well and add the chopped Onions along with the eggplants.
  • Add the grated garlic, turmeric powder, chilli powder, sugar, coriander powder, cumin powder and salt.
  • Cover and cook for 5 minutes.
  • Stir and cook until done.
  • Sprinkle garam masala, garnish with Cilantro and serve with phulkas or parathas.
