Ingredients

  • 3 onions, chopped
  • 3 eggplants, Chopped
  • 2 tomatoes, chopped
  • 2 Garlic cloves, chopped fine
  • 1 inch ginger, chopped fine
  • 1 tbsp - oil
  • 1 tsp - Cumin seeds
  • Salt to taste
  • A pinch Turmeric powder
  • 1/2 tsp - chilli powder
  • 1/4 tsp - coriander powder
  • 1/4 tsp - cumin powder
  • Salt to taste
  • 1/2 tsp - Garam Masala
  • Cilantro (optional)
  • How to Make Eggplant onion curry:

    1. Heat oil in a wok, add the cumin seeds. When it splutters, add the tomatoes and ginger.
    2. Stir well and add the chopped Onions along with the eggplants.
    3. Add the grated garlic, turmeric powder, chilli powder, sugar, coriander powder, cumin powder and salt.
    4. Cover and cook for 5 minutes.
    5. Stir and cook until done.
    6. Sprinkle garam masala, garnish with Cilantro and serve with phulkas or parathas.
