Elaneer Payasam, or tender coconut Payasam, is a kid-friendly, chilled dessert recipe from Kerala and makes for a great after-dinner serving to your family or your guests at a party.

To make Elaneer Payasam, firstly boil the milk until it is reduced to half its original quantity before adding the saffron and condensed milk. Next, add the coconut milk too and allow it to simmer for the next few minutes.

After it simmers, allow the mixture to cool by switching off the flame and taking it off the heat before mixing in the pulp mixture and Elaneer water and chilling the entire thing. Garnish with cashews and fried raisins and serve chilled!
