Ingredients

  • 100 g - Ash gourd
  • 100 g - yellow Pumpkin
  • 100 g - Sweet Potato
  • 1 - Raw banana
  • 100 g - broad beans
  • 100 g - Green peas
  • 100 g - double beans
  • 1/2 cup - Toor Dal
  • Turmeric powder, a pinch
  • 1/2 cup - coconut, grated
  • 2 tbsp - Coriander seeds
  • 1 tbsp - Channa dal
  • 6 - dry Red Chillies
  • 4 tbsp - oil
  • Salt to taste
  • 1 tsp - Mustard Seeds
  • 1 tsp - Urad Dal
  • Curry leaves, a few
  • How to Make Ezhu than kootu:

    1. Shell peas and double beans. Wash, peel and dice vegetables into large chunks. In a large vessel, cook all vegetables with salt and two cups water.
    2. In a small pan, heat two tbsp oil. Add dhania, red chillies and channa dal and lightly roast.
    3. Add coconut and fry for a minute.
    4. Grind to a paste and keep aside.
    5. Cook toor dal with turmeric powder in a pressure cooker and keep aside.
    6. When vegetables are cooked, add the ground masala and cook for a few minutes.
    7. Next, add the boiled and mashed toor dal and let it cook till bubbles appear.
    8. Heat two tbsp oil, season with mustard seeds, urad dal and curry leaves and pour on the kootu.
    9. Serve hot with rice.
