Ingredients

  • 4 cups - light soy sauce
  • 1 cup - brown sugar, packed
  • 1 tsp each - Garlic and Onion powder
  • 8 tbsp - fresh Lemon juice
  • 4 tsp - ground Ginger
  • 1 - skirt steak (about 3/4 inches thick)
  • Salsa, shredded cheese and sour Cream for garnish
  • How to Make Fajita Marinade:

    1. Combine all ingredients (excluding the beef) & shake well till the sugar dissolves.
    2. Rest overnight in a sealed jar.
    3. Set aside 1 cup of the mixture and pour remainder over beef.
    4. Cover for 2 hours or overnight and keep it refrigerated.
    5. Remove beef from marinade & grill over very hot coals for a short duration (10 mins).
    6. Chop the meat with a cleaver into bite-sized pieces.
    7. Fold into warm tortillas & serve with sour cream, salsa and shredded cheese.
