Ingredients

  • 125 gms. Refined flour
  • 1 tsp. oil
  • 1 tsp. sour curds
  • A few drops yellow food colouring
  • 125 gms. Sugar
  • A few drops essence of kewda or Saffron
  • 30 gms. blanched and sliced Pistachio nuts
  • Silver foil
  • Ghee as required

How to Make Festive Jalebi

  • Mix together flour, warm oil and curds.
  • Add enough warm water to form a thick batter and set aside to ferment for 16 hours. Mix in colour.
  • Put 1 cup water in sugar and prepare quite a thick syrup.
  • Remove from fire, mix in essence and keep it warm.
  • Heat enough ghee for deep frying to smoking, reduce heat and then pour the batter through a thick cloth bag with a hole in the centre and form into small coils.
  • Fry over a gentle fire till crisp, but do not brown.
  • Put the jalebis immediately into prepared syrup.
  • After 5 minutes remove from the syrup and put on a clean plate.
  • Garnish with nuts and pieces of foil. Serve either hold or cold.
