Ingredients

  • 2 cups - rice
  • 7 - large tomatoes
  • 3 - large onions (1 - for garnishing)
  • 1 cup - mint leaves
  • 1 cup - coriander leaves
  • 1 - large green chilli (split lengthwise)
  • 2 tsps - ginger garlic paste
  • 2 - 3 cloves
  • 3 - small sticks of cinnamon
  • 1/2 tsp - cumin seeds
  • Salt and chilli powder to taste
  • 3 tbsp - oil
  • 4.5 cups - water

How to Make Fiery Tomato Rice

  • Wash and soak the rice for 10 mins.
  • Chop tomatoes and onions into small pieces. Wash and chop coriander and mint leaves finely.
  • Heat oil in the pressure cooker.
  • Add cumin seeds, cloves, cinnamon, mint, coriander, green chilli. Fry for a few seconds and add ginger garlic paste.
  • Add onions and after a few mins, add tomatoes. Mix and fry till tomatoes are tender.
  • Add salt and chilli powder.
  • Drain water and add the rice to the tomato onion mix. Add 4.5 cups water.
  • Mix well and pressure cook for 4 - 5 whistles on full flame.
  • Fry sliced onions till golden brown and keep aside.
  • When steam subsides, mix well before serving.
  • Garnish with coriander leaves and fried onions.
