Ingredients

  • 8 fillets - Pomfrets
  • 1 cup - Long grain Rice
  • 2 cups - Shelled cooked shrimps
  • 1/2 cup - Water
  • Juice of 1 Lemon
  • 1/2 cup - French dressing
  • Salt, freshy ground pepper
  • Curry Cream Sauce:
  • 2 cups - Mayonnaise
  • 1/4 cup - Salad oil
  • 1 tbsp - Tomato ketchup
  • 1 - onion, finely chopped
  • 2 tbsp - Apricot jam
  • A few sliced Olives
  • 1 tbsp - Curry powder
  • 6 slices - Garlic
  • Salt, pepper and slices of Lemon

How to Make Fish and Rice Mayonnaise

  • Place fillets in a buttered dish, sprinkle with lemon juice, salt and pepper, pour water over it and poach in a moderate oven for 20 mins. allow to cool in the liquid and drain.
  • Heat salad oil and fry onion and chopped garlic, add curry powder, seasonings, tomato ketchup and 1/2 cup water, simmer for 10 mins. stir in apricot jam and boil for 1 min, strain and cool.
  • Mix in the mayonnaise.
  • Boil rice and drain, stir in boiled shrimps, salt, pepper and French dressing, spread rice on a flat, serving dish, arrange fish fillets on top of it, and pour curry sauce over it all.
  • Serve cold garnished with olives and lemon slices.
