Fish in Plaintain Leaves is a version of the famous Parsi dish, Patra ni Machi. Any fish that's meaty, white and delicate can be used. Here, Pomfret is coated with green chutney and steam cooked in a banana leaf. The leaves lock in the flavours and keeps the fish moist.   • 1 pomfret, sliced
  • For chutney:
  • Half a coconut
  • 1 bunch coriander leaves
  • 5 green chillies
  • 1 tsp. cumin seeds
  • 12 Mint leaves
  • 4 flakes garlic
  • 1 small onion
  • 1 small green Mango or juice of 1 small lime
  • 1 tsp. sugar
  • Salt and chilli powder to taste

How to Make Fish in Plaintain Leaves

  • 1. Grind all the chutney ingredients to a paste.
  • 2. Coat each piece of dish on either side and set aside for 15 mins.
  • 3. Spread plantain leaves and place a slice of fish in the middle of each leaf.
  • 4. Roll the leaf gently into a roll and tie with a piece of thread.
  • 5. Steam the fish for 10 minutes on either side.
  • 6. If you don’t have plantain leaves, you can steam in brown paper.
