Add soya sauce, corn flour and water in a bowl and mix thoroughly, set aside Heat 2 tbsp oil in a pan over medium heat and start stir frying the chicken pieces. Add sufficient salt and pepper according to your taste and cook till chicken is cooked
Similarly stir fry green peas and spring onions and keep aside
Stir fry mushrooms very carefully for a short period of time so the pieces remain intact
Stir fry cashews and set aside
So all the main ingredients are stir fried and looking great now pour the soy sauce mixture in a sufficiently roomy pan which will allow you to saute all the stir fried things without feeding it all to the stove, allow the mixture to thicken on medium heat
Add green peas, spring onions and chicken and saute them well and carefully turn down the heat when required after a while add mushrooms, saute occasionally till the mixture runs dry
Add cashew nuts and saute lightly
Serve with toasted Bread and Butter and cooked Corn Kernels to make an whole some gourmet meal.
