Ingredients

  • 600 g - medium size prawns, trimmed, washed and drained
  • 5 cups - oil for deep frying
  • 4 - shallots, chopped
  • 4 Cloves - garlic, chopped
  • 1 tsp - ginger, chopped
  • For Sauce:
  • 2 tbsp - Tomato sauce
  • 1/2 tsp - sesame oil
  • 1/2 tsp - pepper
  • 1 tsp - Sugar
  • 1 tbsp - thick soy sauce
  • 1 tbsp - lea and perrins sauce
  • 1/2 - Chicken cube, crumbled
  • 1/2 cup - water
  • 1 tsp - Chinese cooking wine (optional)
  • For garnishing:
  • some chopped Spring onions
  • chopped Red Chillies
  • How to Make Fried Prawns in Shell:

    1. Heat oil until very hot.
    2. Deep fry prawns for about 1 minute. Drain and keep aside
    3. Leave 2 tbsp oil in wok. Saute shallots, garlic and ginger until fragrant. Add prawns.
    4. Stir to mix and pour in the sauces.
    5. Stir and cook until the gravy is thick and the prawns have absorbed all the seasoning.
    6. Serve with the garnishing.
