Ingredients

  • 1 1/4 cup - crushed wheat
  • 500 g - chicken breast, chopped into medium size pieces
  • 1 cup - water
  • 1/4 cup - fruit chutney
  • 1 tbsp - butter
  • 3 tbsp - oil
  • 2 tbsp - chopped coriander leaves
  • 1 tbsp - chopped fresh mint
  • 2 tsp - grinded fresh ginger
  • 1 clove - garlic, crushed
  • 1/2 tsp - red chilli powder
  • 1 and a half tbsp - white vinegar

How to Make Fruity, Nutty Chicken with Crushed Wheat

  • Bring water to a boil in a pan, add the crushed wheat and butter.
  • Stir, cover for 1 min. and remove from heat.
  • Keep covered, let stand for 6-8 mins. or until water is absorbed.
  • Add the chopped coriander and stir. Keep aside.
  • Heat the oil in a wok.
  • Stir-fry the chicken in batches, until tender. Keep aside.
  • Return all the stir fried chicken back into the wok.
  • Add mint leaves, ginger, garlic, red chillies, chutney and vinegar.
  • Stir and cook until mixture boils and thickens.
  • Stir in the cooked crushed wheat just before serving. Serve hot.
