Fugias is a delightful breakfast recipe that is part of the cuisine of East Indian community - East Indians or East Indian Catholics are Roman Catholics based in Mumbai and Thane. 

Fugias is a sweet, deep fried bread that tastes best with curries like Sorpotel and Chicken Curry. The bread is made of maida, coconut juice, sugar, eggs and yeast.

Ingredients

  • 1 kg - flour/Maida (knead the Maida well with Coconut juice)
  • 1/2 cup - Coconut juice
  • 1 tsp - Sugar
  • 2 - eggs
  • 1 tbsp - fresh Yeast
  • How to Make Fuggias - East Indian Bread:

    1. Knead the maida well with coconut juice, sugar and add the beaten eggs and yeast.
    2. The dough should be thick and light enough to form balls. Leave it for overnight to rise well.
    3. Next day pour enough cooking oil in a deep frying pan, when the oil is boiling, drop the fugia balls in the oil.
    4. To form the balls, grasp some dough with the left hand and squeeze it through the thumb and the fore finger.
    5. When it becomes brown remove with the perforated ladle.
