Ingredients

  • 2 cups - Frozen Mexican Vegetable Mix (Containing red, yellow, orange and green bell pepper, red kidney beans, beans, baby corn, sweet corn)
  • 1 - Onion, chopped thinly lengthwise
  • 1-2 - Green chillies, slit lengthwise
  • 1/2 cup - Masoor dal/Red lentils
  • 1/2 tsp - Turmeric powder
  • 1 tsp - Coriander powder
  • 1 tsp - Sambar powder (Any brand would do)
  • 2-3 tbsp - Dry coconut scrapes
  • 1 sprig - Curry Leaves
  • 2 sprigs - Coriander Leaves
  • 3 cups - Water
  • 3 tsp - Oil
  • 1 tsp - Mustard seeds
  • 1/2 tsp - Cumin seeds
  • Salt to taste

How to Make Fusion Sambar with Mexican Veggies

  • Thaw the frozen mix vegetable mix.
  • In a pressure cooker add oil. When hot add mustard seeds and cumin seeds.
  • As they splutter add onions and green chillies and saute well.
  • Now add turmeric powder, coriander powder and mix well.
  • Add thawed vegetable mix to it and saute well.
  • Now add masoor dal/red lentils.
  • Add salt and mix well.
  • Add 1 cup water and pressure cook till done.
  • Transfer it to another deep bottom pan.
  • Now add remaining water, salt if required, and sambar powder to it and mix well.
  • Add coconut scrapes to it and mix again.
  • Cook till you see bubbles in the sambar.
  • Now remove it off the stove and add curry leaves, coriander leaves and mix well.
  • Enjoy with hot rice and ghee/clarified butter
