  • 2 cups - flour (all-purpose)
  • 1 cup - brown sugar (or confectioner's sugar)
  • 1/2 cup --butter (room temperature)
  • 2 - eggs
  • 1 tsp - ground ginger (soundh)
  • 1 - ground clove
  • 1/2 tsp - cinnamon powder
  • 3/4 cup - milk
  • 1 tbsp - candied cherries
  • 1.5 tbsp - cocoa powder
  • 1 tsp - vanilla or 1 to 2 drops vanilla essence
  • 1/4 tsp - salt
  • 1 tbsp - baking powder

How to Make Ginger Cake(with Eggs)

  • Preheat oven to 177 degrees Celsius. Butter and flour a cake pan, and set aside.
  • Mix flour, salt, ground cinnamon, ground cloves, ground ginger, cocoa powder and baking powder in a bowl.
  • In an another bowl mix butter and sugar and blend (for a minute).
  • Add eggs one by one, blending well after each addition.
  • Then add the mixture of flour.
  • To it add other dried ingredients and milk alternately - beginning and ending with dry ingredients.
  • Add candied cherries. Beat well till incorporated.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 40-45 minutes or until a toothpick inserted in the cake comes out clean. Remove from oven and let cake cool for 10 minutes before removing from cake pan.
  • Let it cool completely and dust top with confectioner's sugar.
  • Can be served warm or at room temperature with softly whipped cream or with honey.
