  • 2 cups - flour (all-purpose)
  • 1 cup - Brown sugar (or confectioner's sugar)
  • 1/2 cup --butter (room temperature)
  • 2 - eggs
  • 1 tsp - ground Ginger (soundh)
  • 1 - ground Clove
  • 1/2 tsp - Cinnamon powder
  • 3/4 cup - Milk
  • 1 tbsp - candied Cherries
  • 1.5 tbsp - cocoa powder
  • 1 tsp - vanilla or 1 to 2 drops vanilla essence
  • 1/4 tsp - salt
  • 1 tbsp - baking powder
  • How to Make Ginger Cake(with Eggs):

    1. Preheat oven to 177 degrees Celsius. Butter and flour a cake pan, and set aside.
    2. Mix flour, salt, ground cinnamon, ground cloves, ground ginger, cocoa powder and baking powder in a bowl.
    3. In an another bowl mix butter and sugar and blend (for a minute).
    4. Add eggs one by one, blending well after each addition.
    5. Then add the mixture of flour.
    6. To it add other dried ingredients and milk alternately - beginning and ending with dry ingredients.
    7. Add candied cherries. Beat well till incorporated.
    8. Pour the batter into the prepared cake pan and smooth the top with a spatula.
    9. Bake for 40-45 minutes or until a toothpick inserted in the cake comes out clean. Remove from oven and let cake cool for 10 minutes before removing from cake pan.
    10. Let it cool completely and dust top with confectioner's sugar.
    11. Can be served warm or at room temperature with softly whipped cream or with honey.
