Ingredients

  • 12 - big limes
  • 75 gm - ginger (chopped into big pieces)
  • 1 kg - sugar
  • 1/2 liter - water
  • 1 tbsp - milk

How to Make Ginger Lime

  • Boil the water with the sugar in a heavy bottomed steel vessel. After a boil add milk. Spoon off the dirt that collects on the top of the sugar syrup.
  • Once the sugar dissolves completely remove from gas and cool completely.
  • Strain and keep aside.
  • Remove the juice of the limes.
  • Add the ginger to the lime juice.
  • Refrigerate for 24 hours.
  • Remove the ginger pieces from the lime juice.
  • Add this lime juice to the sugar syrup and mix well.
  • Store in dry sterilised bottles and refrigerate.
  • To Serve:
  • In a glass pour approximately 3 tbsp ginger lime and sufficient water and crushed ice.
  • Mix and serve chilled.
