Ingredients

  • 200 g - fresh ginger, peeled
  • 200 g - fresh turmeric, peeled
  • 200 g - fresh peppercorn
  • 15 Lemons
  • 1 tbsp - salt
  • Salt for marinating

How to Make Ginger Pickle

  • Slice ginger and turmeric into thin slivers.
  • Put this in a glass jar, along with peppercorns.
  • Sprinkle 1/4 cup salt, shake this well.
  • Keep this for 36 hours, shaking the jar once or twice in between.
  • After 36 houurs drain out the liquid and wash under running water.
  • Dab out excess moisture in a cloth, fill this into a sterile jar.
  • Add strained lemon juice, salt and shake.
  • Shake this at least once or twice in a day.
  • Pickle will tenderize in 3-4 days.
