  • 500 grams - fresh Ginger
  • 500 grams - Sugar
  • 3 - Cloves
  • 2 pieces - Cinnamon
  • 1/2 tsp - salt
  • 1 liter - water
  • How to Make Ginger Preserve:

    1. Peel, wash and cut the ginger into thin slivers about 1 inch in length.
    2. Boil the ginger with the sugar, salt, cinnamon and cloves in 1 litre of water till the sugar melts, and the mixture thickens.
    3. Stir frequently to prevent the mixture from burning.
    4. Simmer till the sugar begins to crystallize.
    5. Remove from heat and pour onto a greased plate to dry.
    6. When completely dry and cool, store in clean jars and use whenever required.
    7. This is a good digestive.
