How to Make Ginger Preserve

  • Peel, wash and cut the ginger into thin slivers about 1 inch in length.
  • Boil the ginger with the sugar, salt, cinnamon and cloves in 1 litre of water till the sugar melts, and the mixture thickens.
  • Stir frequently to prevent the mixture from burning.
  • Simmer till the sugar begins to crystallize.
  • Remove from heat and pour onto a greased plate to dry.
  • When completely dry and cool, store in clean jars and use whenever required.
  • This is a good digestive.
