Ingredients

  • For the Pie crust:
  • 1.5 cups - plain flour
  • 1/3 cup - margarine
  • 1/2 tsp - salt
  • 1.5 to 2 tbsp - cold milk
  • For the Filling:
  • 1 cup - packed brown sugar
  • 2 eggs, beaten
  • 2 tbsp - butter
  • 1 cup - cashewnuts, coarsely chopped
  • 4 to 5 drops vanilla essence

How to Make Golden Cashewnut Pie

  • Sift together the flour and salt.
  • Cut the margarine with a knife till the mixture resembles large breadcrumbs.
  • Sprinkle cold milk and mix with a fork till dough can be formed into a ball.
  • Handle dough as little as possible.
  • Roll out on a floured board to a 10 inch circle.
  • Fit into a greased pie dish.
  • Fold edges under to thicken and flute attractively.
  • Cream together the sugar and butter.
  • Add vanilla, eggs and blend well.
  • Mix the cashewnuts.
  • Spoon into a pie crust.
  • Bake in a pre-heated oven (350 degree F) for 20 to 25 mins till golden brown.
