Ingredients

  • Cooked Rice - 2 cup
  • Tofu - 200 g
  • Green curry paste - 2 tbsp
  • Coconut Milk - 2/3 cup
  • Pearl Eggplant - 1/2 cup(sunda kai)
  • Sweet Basil - 2 to 3 tbsp
  • Kafir Lime leaves - 3
  • Fresh Red Chilli - 1/2
  • Palm Sugar - 2 tsp
  • Fish sauce - 2 to 3 tsp or salt to taste
  • Oil - 1 tbsp

How to Make Green Curry Fried Rice

  • Stir fry green curry paste with oil and coconut milk.
  • Add pearl eggplant fry till they are tender and add fish sauce and palm sugar.
  • Add tofu and simmer till almost dry.
  • Add the rice, chilli, kafir lime leaf and basil.
  • Stir till well mixed. Serve.
