Ingredients

  • Chicken breast fillets - 500 g
  • For marinade:
  • Garlic - 2 tbsp, chopped
  • Coriander roots - 1 tbsp, chopped
  • Black pepper corns - 1 tbsp, chopped
  • Lemon grass - 1 tbsp
  • Ginger - 1 tbsp, chopped
  • Turmeric powder - 2 tsp
  • Sugar - 1 tsp
  • Soya sauce - 2 tbsp
  • Thai fish sauce - 2 tbsp
  • Olive oil - 1 tbsp
  • For Stir fried vegetables:
  • Oil - 2 tsp
  • garlic - 5 flakes, chopped
  • Onion - 1, sliced
  • Carrot - 1/2 cup, sliced
  • Baby corn - 10 , cut into 3 pieces
  • Zucchini - 1/2 cup, sliced
  • Broccoli - 1 cup, cut into bite size pieces
  • Mushrooms - 100 g cut in halves
  • Water or skimmed chicken stock - 1/2 cup
  • Salt to taste
  • For Sauce:
  • Soya sauce - 1 tbsp
  • Black pepper corns - 1 tsp crushed
  • Sugar - 1/2 tsp.

How to Make Grilled Chicken with Stir Fried Vegetables

  • Mix together the ingredients for the marinade and marinate the chicken in it for 4 hours.
  • Then grill until done and keep aside, but keep warm.
  • Next, heat some oil, add garlic and onion. Saute until onions turn translucent.
  • Add in all the vegetables and saute for a few mins.
  • Add in the stock and cook until done. (Vegetables should still be crisp, with a bite to them.)
  • Mix together all the ingredients for the sauce and keep aside.
  • Serve the chicken breasts with the vegetables and sauce on the side.
