Ingredients

  • Chicken breast fillets - 500 g
  • For marinade:
  • Garlic - 2 tbsp, chopped
  • Coriander roots - 1 tbsp, chopped
  • Black pepper Corns - 1 tbsp, chopped
  • Lemon grass - 1 tbsp
  • Ginger - 1 tbsp, chopped
  • Turmeric powder - 2 tsp
  • Sugar - 1 tsp
  • Soya sauce - 2 tbsp
  • Thai fish sauce - 2 tbsp
  • Olive oil - 1 tbsp
  • For Stir fried vegetables:
  • Oil - 2 tsp
  • Garlic - 5 flakes, chopped
  • Onion - 1, sliced
  • Carrot - 1/2 cup, sliced
  • Baby Corn - 10 , cut into 3 pieces
  • Zucchini - 1/2 cup, sliced
  • Broccoli - 1 cup, cut into bite size pieces
  • Mushrooms - 100 g cut in halves
  • Water or skimmed Chicken stock - 1/2 cup
  • Salt to taste
  • For Sauce:
  • Soya sauce - 1 tbsp
  • Black pepper Corns - 1 tsp crushed
  • Sugar - 1/2 tsp.
  • How to Make Grilled Chicken with Stir Fried Vegetables:

    1. Mix together the ingredients for the marinade and marinate the chicken in it for 4 hours.
    2. Then grill until done and keep aside, but keep warm.
    3. Next, heat some oil, add garlic and onion. Saute until onions turn translucent.
    4. Add in all the vegetables and saute for a few mins.
    5. Add in the stock and cook until done. (Vegetables should still be crisp, with a bite to them.)
    6. Mix together all the ingredients for the sauce and keep aside.
    7. Serve the chicken breasts with the vegetables and sauce on the side.
