Ingredients

  • 180 g - any kind of baby fish
  • 1 tbsp - Lemon juice
  • Salt and pepper to taste
  • For stuffed baby marrow:
  • 2 small baby marrows, cored
  • 2 tbsp - Olive oil
  • 2 tbsp - each, chopped Onion and Tomato
  • 1 tbsp - each, chopped garlic, Carrot and Eggplant
  • Salt and pepper to taste
  • 1 tsp - cumin
  • For date sauce:
  • 1 cup cubed Tomato
  • 1 tbsp - Tomato paste
  • 1 tbsp - chopped Onion
  • 1 tbsp - chopped Garlic
  • 2 tbsp - Olive oil
  • 1/2 cup - Dates
  • 1 cup - fish stock
  • For oriental rice:
  • 1 cup - basmati rice, pre-soaked
  • 200 g - lamb, minced
  • Salt and pepper, to taste
  • 1 tsp - cumin powder
  • 2 tbsp - each, chopped Onion and Ghee (clarified butter)
  • 2 cups - Chicken stock
  • How to Make Grilled fish with oriental rice and date sauce:

    1. Marinate fish with lemon juice, salt and pepper for 30 mins.
    2. Grill till cooked through and keep aside.
    3. For stuffed baby marrow:
    4. Heat oil in a frying pan and saute the ingredients together till done.
    5. Let it cool and then stuff the baby marrow with the cooked mixture.
    6. Bake in a pre-heated oven at 180 deg C for 15 mins. Keep aside.
    7. For date sauce:
    8. Heat oil in a pan.
    9. Add onion and garlic. Saute.
    10. Add tomato cubes and paste.
    11. Cook for a few minutes.
    12. Add fish stock and cook till the liquid reduces.
    13. Add dates and cook for a few more minutes.
    14. Blend and check for seasoning. Keep aside.
    15. For the oriental rice:
    16. Heat ghee in a saucepan and saute onion till golden brown.
    17. Add mince and seasoning.
    18. Cook for five minutes.
    19. Stir in spices followed by stock. Add pre-soaked rice and cook till tender.
    20. To serve: Layer grilled fish and oriental rice alongside stuffed baby marrow and pour date sauce over.
